2018 Arcadia Prise de Mousse
A single varietal Chardonnay sparkling wine from Yamagata, produced using the traditional method. The base wine was fermented in French oak barriques and then matured in barrel for around 5 months, before spending 4 years and 8 months on the lees in bottle. In the glass, it shows a clear, golden shimmer. On the nose, there are aromas of white peach and apricot, complemented by notes of toasted nuts and toast from the long bottle ageing. On the palate, it is juicy and concentrated, with citrus driven, slightly creamy fruit, supported by a fresh, precise acidity. Best served well chilled at 3 to 8 °C.
Food pairing: Excellent with oysters or scallops, tempura, including vegetable tempura, pan fried poultry, or a creamy risotto with a citrus note.
