Sparkling Koshu 2023 from Lumière is made from Koshu grown in Minaminoro in Fuefuki, Yamanashi. The second fermentation follows the traditional method in bottle. The wine then matures for 20 months in bottle before disgorgement. The volume lost is topped up with the same wine, with no sweetening dosage.
Fresh Japanese citrus and delicate yeasty notes shape the restrained aromas. The Brut combines fine, persistent mousse with fresh acidity and a light, clear structure.
