Sparkling Koshu 2023 by Lumière
Koshu · Yamanashi · Brut · 11% vol · 0.75 l
The Koshu grapes come from Minaminoro in Fuefuki. After the second fermentation, the wine spends 20 months in bottle. Fresh Japanese citrus and subtle yeasty spice define its understated aroma. Fine persistent bubbles and fresh acidity meet a light, clear structure.
Koshu Sparkling 2021 by Fujiclair
Koshu · Yamanashi · Sec · 13% vol · 0.75 l
Fujiclair combines traditional bottle fermentation with around 14 months of bottle ageing. Apple, lemon peel, quince and orange meet delicate bread notes. Persistent bubbles, rounded acidity and savoury umami give this sparkling wine its character.

Lumière is labelled Brut and Fujiclair Sec, giving the set two sweetness styles. Taste well chilled, ideally in identical glasses. Begin with Lumière, then compare fruit, acidity, bubbles and finish with Fujiclair.
